Hey there, tea drinkers! I hope things have been going well for you. I know it’s been a while. Blake’s Tea Journal has been on hiatus the last few months. I recently moved from the Nashville, TN area back to the Dallas, TX area, and just before, during, and for a while after I was distracted by finishing up my now previous job, actually moving, and then adjusting to my new lifestyle. But now that I feel more or less settled in, I’m going to try to get back to adding new teas to my journal and putting out new posts here on the blog. With my return I’ve got some ideas for new post types, but I thought for this returning post that a Taste of Tea entry would be appropriate. So, in today’s post I’ll relay my tea-tasting journal entry for the Khongea Gold Bud Assam tea from High Garden Woodland Tea House and Sipping Apothecary in Nashville, TN. This tea was part of a going away gift (which included a couple other teas; topics for future posts) from my lab mates back in Nashville, so I thought it would be an appropriate choice for my inaugural post back after that.
Type of Tea: Black Tea, loose
Dry tea: The scent emanating from the package was mildly sweet but mostly had the scent of hay. The tea itself was mostly dark coffee color but with a decent portion of lighter colored “gold” buds. The leaves appeared to be rolled and mostly somewhat needle-like shapes.
Preparation: 1 heaped teaspoon in approximately 170 mL (5.8 oz) of freshly boiled water at approximately 95-100 C (203-212 F) water for 4 minutes
I warmed the teapot and added the dry tea to help further activate its scent. The activated scent still had a mild sweetness and the notes of hay, but I also picked up a slight note of apricot and a touch of peppercorn.
Tea liquor: After infusing, the scent coming off of the liquor was light, but smelled like wet hay with a little touch of roastiness (I thought maybe nutty). The color of the liquor was a dark golden-orange, honey-like, color.
The tea liquor had a warm hay-like taste. There was some astringency with dry finish; the finish also had a touch minerally sweetness.

Final Thoughts: I thought the gold buds mixed in with the dark tea leaves made this tea visually interesting. With its notes of hay, touch of minerally sweetness, and hints of apricot, I found this to be an enjoyable black tea to drink on its own. However, I also imagine it would be a great one to take with milk and sweetener, or a good accompaniment to a delicious piece of chocolate cake.
